I can’t get enough of these #vegetarian Sweet Potato and Cauliflower Tacos and plan to work them into my regular meal rotation for summer.   • Savory fondue board chock full of veggies, meat, and bread...SIGN ME UP! This cheesy fondue couldn't be easier thanks to this Swiss Gruyere Mix. (another favorite @traderjoes find) I also use this mix in quiche and frittatas. To round out the pretty veggies I added sautéed shrimp, oven roasted potatoes, prosciutto, and homemade croutons. This is perfect for a party or a family meal on the weekend! I've been so pleased with this @cuisinart fondue pot. Such a great purchase – lots of fun fondue memories being made around our dinner table. I'll link to the product in stories and at the link in profile.   • If spring had a signature vegetable, I feel like it would be asparagus. For years I would simply roast it with olive oil, S&P, and finish with a squeeze of lemon juice (shocker, I know) – but now my favorite way to prepare it is pickled! It's a quick pickle (so it doesn't take that long) and full of delicious tangy bright flavors. I made it for Easter and it was a hit. What do you think? Do you like quick pickling vegetables?   • I've used countless peelers over the years and I have a few standout favorites. For years I swore by a serrated peeler, then there was my ceramic peeler phase, and I've even gone back and forth between a preference over a "swivel peeler" and a "y-peeler." At the end of the day I always come back to this guy – the original Swiss Peeler. It peels fruits and vegetables (even ones with tough skins) effortlessly, and guess what...you can get THREE OF THEM for under $10 on Amazon. Not bad. Do you and your utensil drawer a favor and order a set of these bad boys. They are awesome. Do you feel as passionately about peelers as I do?! If so, tell me your favorite below.   • If you like bread and you like salad...boy do I have a treat for you! Panzanella (traditionally made up of bread cubes and tomatoes/veggies) is my favorite way to enjoy a salad. Crispy bread cubes are tossed with roasted tomatoes and veggies then generously drizzled with a punchy vinaigrette. Fold in some fresh mozzarella and basil and you've got the closest thing you'll get to summer in a bowl. While this is such an easy way to use your veggies, I feel like most home cooks don't make this dish often enough. Whether you're bringing a dish to a potluck or making a simple weeknight meal, consider throwing this Roasted Vegetable Panzanella into your recipe rotation! #veggies #panzanella #kelseysinstarecipes #kelseynixon
